Mark Greenaway tells us what's new in food and drink

We are delighted that Mark Greenaway, Chef Patron at Restaurant Mark Greenaway will be demonstrating on the Fine Food Live stage at Speciality & Fine Food Fair.

In the run-up to SFFF15 we interviewed him to find out his thoughts on the newest food trends and what he's going to be doing at the show...

What’s new in Scottish food & drink?

We are seeing a real surge in artisan producers, I think that this is helped by the support the farmers’ markets are getting throughout Edinburgh, thus ensuring that the producers have a great shop window to showcase their produce.

How do these trends differ from the rest of the UK?

I think we are seeing this trend of increasing numbers of artisan producers all over the UK and should really be supporting it. For such a small island we really are punching above our weight when it comes to produce. 

Tell us more about what you’ll be cooking on Fine Food Live at the Fair?

This year I will be cooking game. Grouse to be specific, although I will be cooking it with some amazing, if not slightly unexpected ingredients and using some modern techniques to bring the dish bang up to date. 

What products are you seeing more of in menus?

I am definitely seeing a lot more producers being named on menus as chefs become more and more proud of their suppliers. We all like to give them the credit that they so richly deserve. 

What are you looking forward to about the show?

I have never been before so I am really looking forward to making new connections and finding that undiscovered ingredient or supplier that I can use in my restaurant.
